FIELDEN Harvest 2019 Rye Whisky

Harvest 2019 Rye Whisky is the first edition in the annual series celebrating Fielden's grain harvest. These annual summer releases express the distinct and varied characteristics of our heritage grains. These whiskies celebrate the flavor nuances of the grains from one growing season to the next. The vintage indicates the year in which the grains were grown and harvested.

In 2019, a dry and warm spring combined with a mild and wet summer resulted in bright and delicate grains that year. Harvest 2019 Rye Whisky was made from these delicate and diverse populations of rye (73%), wheat, and barley, with small amounts being malted. It was produced using two different grain recipes - our classic recipe - 70% rye, 20% wheat, and 10% malted barley, and another recipe focusing solely on rye - 100% rye (75% raw rye and 25% malted rye). Both mashes were fermented for four to five days in stainless steel tanks and then double distilled in pot and column stills. The resulting spirits matured in a combination of nine casks: mostly American oak (STR and second-fill casks), with a Sauternes barrique and a Ramandolo barrel. After a slow marriage, the spirit was gradually reduced to 50% ABV.
