CHAIRMAN'S RESERVE The Forgotten Casks

Chaiman's Reserve Forgotten Casks is an old English style rum. The recipe for this rum was inspired by the casks that were found and saved by the fire that hit St. Lucia Distillers on May 2, 2007. In the panic, the cellar master was forced to find a storage space to save the barrels, which were forgotten and then found a few years later. Originally the rum in these barrels was intended to make Chairman's Reserve Original but over time the rum aged and improved. The cellar master decided to make a separate cuvee called The Forgotten Casks.
ASSEMBLY: An atypical assembly of Coffey Still (distilling column) and Pot Still (Charentais still). The rums are aged from six to eleven years.
AGEING: After their respective distillation (either in Coffey Still or Pot Still) the rums are then aged in ex Bourbon casks.
