Plant Eaux-de-vie
Plant-based eaux de vie, like all eaux de vie, are distilled spirits, to which no sugar has been added after distillation. Their nature is determined by the base ingredient (the raw material from which the sugar is extracted) which does not consist of fruit, but other parts of plants. This category includes eaux de vie made from pine tree buds, roots, maple syrup and many other such materials, with the sugar coming from the plant’s leaves, sap or roots. Other plant-based eaux de vie are known under different names. These include the Mexican mezcals, tequila, sotol, rums and Brazilian cachaças.
