Distillery number 9 was founded in 1840 by two brothers named James and John. Equipped with ten Oregon pine washbacks, it increased the number of its bell-shaped stills from four to six in 1973 and from six to eight in 1977. This version was matured in a cask previously used for Oloroso sherry and invites us to explore...

Nose : Refined, distinguished. The balsamic (lime blossom, pine, thuja), exotic (guava, mango) and floral (hawthorn) first nose is especially deep. Allowed to breathe, apricot, orange and melon appear alongside noble spices (cardamom, ginger) and more tertiary fragrances (porcini mushroom, moss). Red and black fruits (strawberry, bramble) then arrive in a climax.

Appearance : Cuivre orangé.

Palate : Lively and elegant. Continuing the tasting, the start of the finish is incredibly mature (date,finish, toffee). Coconut, quince jelly and pressed orange flavours then refresh the flavour palette.

Overall : Long, well-rounded. The tenderly spicy (nutmeg, cinnamon) start of the finish is oxidative (brandied cherry) and floral (wilted rose,petunia). In the after-taste, more resinous (pine) and honeyed (lavender, heather) flavours develop together. The very end of the finish is powdery (cocoa) and nobly wood (floating dust).
