BELLEVOYE BLANC, the whisky from France matured in Sauternes barrels.
Sauternes wines are reputed to be the best sweet wines in the world. Indeed, the exceptional microclimate of the appellation during the harvest (cool nights and humid mornings) develops noble rot on the grapes, which leads to a concentration of sugars and candied aromas.
The barrels used in the final maturing process come from a famous Sauternes Cru Classé. To guarantee the freshness of the aromas, we empty the wine from the barrel and fill it immediately with whisky. Thanks to this method, we do not use sulphur, which is used to preserve the empty barrels between these two stages. This avoids bad tastes being transferred to the whisky by the sulphur meching of the barrels.
Profile: balance, elegance, roundness and aromatic complexity.
Ageing: 3 to 8 years in French oak barrels in each of the three selected distilleries. Then secondary aging, between 9 to 12 months post-blending in new French oak barrels in the Charentes region.
Medals 2022: Gold medal at the Concours Agricole de Paris. Gold medal at the International Spirits Challenge.
